The apple varieties listed below are orchard favorites and highly recommended for fresh eating. Many of these varieties also make fantastic cider due to their high sugar content and ample acidity. I've highlighted a few standouts in the "Also Cider!" section.

I offer one hint as you go about your selection: Hone in on the 'ugly' apples. How did such unremarkable fruits find hospitable homes for centuries without fail? Flavor, my friend, flavor.

Golden Delicious Sport, Mr. Colvis's orchard, 1900s

Testing at 20 Brix, Colvis Spice is officially the sweetest apple in Pipsqueak Orchard. It's also one of the most uniquely flavored.

Besides a lip-smacking, honeyed sweetness, Colvis Spice contains a beautiful warm, nutmeg flavor balanced with a gentle dose of tropical fruit. I would have never come up with the recipe, but I'm glad nature did.

Though firm, Colvis Spice lacks the crunchy, juicy flesh of modern apples. I don't mind. I'm too busy wondering how an apple's flavor can be intensely sweet yet entirely subtle at the same time. It's a question you will also ask yourself, bite after each bite, until the apple disappears.
